Well, I posted about this recipe almost a year ago! We’ve opened a bottle and it is time to discuss what we’ve found!
First off, we settled on the name “Always and Forever Mead,” and are workshopping labels for it. I want to get some more color into these in the future, especially with our logo having such bright colors, but they are a work in progress, as are some of our recipes.
On to the mead!
Well… it was good. Not great, not spectacular, but not bad either. But not what we were going for. The alcohol taste was not too forward, but neither were any of the others (full disclosure, we did not add any ginger). Nor were any of them that distinguishable. Honestly, it tasted like alcoholic grape juice. Not wine, but actual grape juice. The orange lended the bit of tartness on the back end but overall, there was not much orange flavor, and the cinnamon did not come through at all.
OK, so what’s next?
Well, we go back to the drawing board. Drop some of the hibiscus petals out of the tea, throw the cinnamon stick (or two) in while that is steeping. Add the ginger. More orange, use orange juice? Lots of ideas, we just need time (and empty fermenters) to work on these.
